There are many kinds of green tea in spring, each with its own unique flavor and charm. Here are some green teas that you can't miss in spring!

● West Lake Longjing

West Lake Longjing is famous for its "green color, rich fragrance, sweet taste, and beautiful shape".

It is produced in the West Lake area of Hangzhou, Zhejiang, and has a long history of more than 1,200 years. It is a treasure created by Han tea farmers. It has a fresh and fragrant taste, sweet and refreshing, rich in amino acids, catechins, chlorophyll, vitamin C and other ingredients, and rich in nutrition. The "Eighteen Imperial Tea Trees" conferred by Emperor Qianlong still grow on Shifeng Mountain, witnessing the thousand-year inheritance of Longjing tea from tribute tea in the Tang and Song dynasties to intangible cultural heritage skills. When brewing, the tea soup is tender green like jade, with bean and chestnut aromas intertwined, and the fragrance lingers on the teeth and cheeks after drinking, just as the ancients said: "The taste of no taste is the taste"

● Dongting Biluochun

Dongting Biluochun, because of its high and lasting fragrance, has been called "shocking fragrance" in history. It is the only historical famous tea in the green tea industry that can be compared with West Lake Longjing.

It is said that Emperor Kangxi tasted it when he went to the south of the Yangtze River and felt that the name was not elegant. According to its green color and shape like a snail, it was named "Biluochun".

It is produced in Dongting Mountain, Taihu Lake, Jiangsu, China. It is famous for "curling like a snail and covered with white hairs". It is one of the top ten famous teas in China. Its production requires traditional hand-made tea making techniques. The fresh leaves are rubbed into a spiral shape, which resembles Taihu Biluo. After brewing, the tea soup is silvery green, with a clear floral and fruity fragrance, and a fresh taste. It has the characteristics of "one tender (tender buds and leaves) and three fresh (fresh color, fresh fragrance, and fresh taste)". The clouds and mist of Taihu Lake coexist with the tea garden, forming an ecological wonder of "green leaves slowly unfolding, full of freshness", and the tea fragrance adds the spirit of the Jiangnan water town.

● Xinyang Maojian

The Maojian tea from Xinyang, Henan, China is characterized by "fine, round, tight and straight, with white hair exposed". After brewing, the tea soup is bright yellow-green, with a fresh and sweet taste and a unique aroma of cooked chestnuts.

The sandy soil and mild climate of its core production area "Five Clouds, Two Ponds and One Village" (such as Cheyun Mountain and Heilongtan) provide an excellent growth environment for tea trees. Historically, Xinyang tea has been recorded since the Tang Dynasty Lu Yu's "The Classic of Tea". In 1915, it won the gold medal at the Panama World Expo and became one of the top ten famous teas in China.

When drinking, the tea soup is as clear as a mountain spring, and the bottom of the leaves is fresh and green, as if walking among the green mountains and waters of southern Henan.

● Anji White Tea

Anji White Tea, although its name contains "white", is a real green tea. Its main production area is in Anji County, Huzhou City, Zhejiang Province, China. It is called "white tea" because its tree species is the local specialty "White Leaf No. 1". It is a rising star that has only successfully broken through the circle in recent years.

Its amino acid content is as high as 6%-8%, which is 2-3 times that of ordinary green tea. After brewing, the tea soup is clear and transparent, with a fresh taste and a light sweetness. It is known as the "white and rich beauty in green tea".

● Lushan Clouds and Mists

The cloud and mist tea of Lushan, Jiangxi, is named because it is nourished by the clouds and mist of Lushan all year round. It is the only green tea produced from high mountains among the top ten famous teas in China.

Its appearance is tight and the white hair is exposed. After brewing, the tea soup is clear and the taste is fresh and mellow, with the fragrance of pine smoke and beans. The cultural heritage of Lushan "One Mountain Hidden Six Religions" adds more Zen to the tea fragrance. Zhang Yuan of the Ming Dynasty praised it in his "The Record of Tea": "Tea does not seek to be refined, but the pot is not dry; wine does not seek to be mellow, but the jar is not empty", which fully describes the indifference and transcendence of Yunwu Tea.

● Taiping Houkui

Taiping Houkui is the most peculiar-looking green tea and the longest tea shape. The best producing area is Houkeng in Xinming Township, Huangshan District, Anhui Province, China, and Taiping Houkui is named after this.

The tea leaves are flat and straight, with two leaves embracing buds, stretching naturally, covered with white hairs all over the body, and the veins are green with red, commonly known as "red silk thread", and have the reputation of "Houkui has two pointed ends, not scattered, not warped, and not curled". After brewing, the orchid fragrance is high and refreshing, and the taste is mellow.

● Lu'an Guapian

The peculiarity of Lu'an Guapian is that it has no buds, no stems, and is made of pure leaves. It is named because it looks like melon seeds. It is mainly produced in the Dabie Mountains area of Lu'an City, Anhui Province, China. The picking period of Lu'an Guapian is usually from around Grain Rain to before Grain Full. Its leaves are thick, the caffeine content is low, the tea soup is sweet and not bitter, and has a unique aroma of cooked chestnuts. Its production requires ancient processes such as "slicing, frying, and drying". The finished tea has excellent brewing resistance and is known as the "dark horse in green tea".

● Zhuyeqing

Emei Mountain is one of the birthplaces of green tea in the world. Zhuyeqing, also known as Qingye Ganlu, is a flat fried green tea produced in Emei Mountain, Sichuan, China, and was created in 1964. "Zhuyeqing" is both a tea variety and its trademark and company name.

Its shape is like bamboo leaves, its color is like jade, the soup color is clear and bright yellow-green, and the taste is fresh and sweet. Zhuyeqing has the rhythm of "three floating and three sinking" in the process of dry tea absorbing water, which is pleasing to the eye.
